Recipe News: Beans and melted cheese on French rolls (Molletes)

Francisca Contreras De Gutierrez describes these sandwiches as "standard market foods" in her book "Meatless Mexican Home Cooking."

This is the traditional way to prepare this sandwich. But many home cooks also serve these as open-faced sandwiches after heating them in the broiler.

"Toast the cut roll first, then smear beans on the cut sides before adding cheese," De Gutierrez writes.

Recipe News: Cure a turkey hangover with these light and healthy recipes

Christmas dinner leftovers can be dressed up and turned into healthful new dishes. You can be inventive and end up with some delicious meals that are completely different from the one you served on the holiday, says Mary Kay Culpepper, editor in chief of Cooking Light magazine. She has used leftover turkey to make minestrone-style turkey soup, turkey soft tacos or fried rice with turkey. Jessie Price, food editor of Eating Well, suggests making a salad with leftover turkey and fresh ingredients such as fennel, pears and blue cheese with shallot vinaigrette dressing: "It'll give you a different taste from the night before."

Recipe News: Easy, kid-friendly recipes satisfy fussy eaters

As an infant, my daughter was a champion eater. She tried whatever concoction I placed in front of her. Butternut squash was sucked down in seconds. Mango chunks were eaten with glee. Even peas were tolerated.

But by age 1, my daughter began to turn up her nose at food. We fell into a sad rotation of mac-and-cheese, cheese quesadillas and cheese ravioli. Ketchup was our saving grace.

I am not alone in my food battle of wills, as evidenced by Annabel Karmel's new cookbook, aptly titled "The Fussy Eaters' Recipe Book."

Recipe News: Baking for people with allergies

This is a favorite time of the year with seasonal foods and music and traditions that make special memories. The smell of fresh baking cookies and the excitement of decorating and tasting your special creations are some of my most treasured memories. But baking those holiday cookies can be challenging when family members have food allergies, says Rosemarie O'Carroll, co-owner of Rose's Wheat Free Bakery, 2901 Central St., Evanston, (847) 859-2723.

It is especially so, when multiple allergies are involved. Baking and cooking becomes in some ways even more special and I think more important to teach children who do have special needs how to make the things that they love, she said. It is worth the extra effort.

Her bakery uses a standard gluten free mix which has been around for a while. This flour mixture can be substituted for all purpose wheat flour in most recipes one for one.

Recipe News: Sample Italian cookies with these three holiday recipes

The holidays are a busy time for Elisa Gismondi-Tufano. As pastry chef at her family's restaurant, Arturo's in Boca Raton, Fla., she is responsible for making the 16 to 20 varieties of Christmas cookies that grace the multi-tiered dessert cart.

By the end of a busy holiday week, she has rolled and shaped about 2,700 of them.

She comes by her cookie baking rightly. Her family has its roots in Sora, Italy. It's a town about 1 1/2 hours west of Rome that is known for its cookie bakers. In fact, the women in different parts of the town keep their recipes secret from those in other parts, she says. She has collected many of her recipes during the family's annual three-week summer visits to relatives.

Recipe News: Gift giving quick bread recipes

Christmas is coming sooner than we realize, with Thanksgiving being so late this year. At this time of year we are decorating our homes with a manger scene and other Christmas decorations, writing Christmas cards, shopping, sewing, making home-made gifts and baking for family and friends or for the elderly who no longer can bake as they used to. Today's recipes are about making quick breads as gifts. I will probably make four double batches using different recipes. Some quick bread recipes say that you can wrap in foil and keep them refrigerated after baking and completely cooled, for two to three weeks, or freeze them (wrapped tightly) for a couple of months. With the amount I make I label some of them "for us", to serve after the holidays when friends stop in for a cup of coffee or to use at a meal. It's a nice treat to serve rather than cookies or candy which they've probably had enough of anyways.

Recipe News: Budget-friendly cookie recipes for $5 or less a batch

Looking for new Christmas cookies to make is easy. Without fail, there are creative ones that appear annually, developed by test kitchens for big food companies and using some of their ingredients. They arrive in the mail. They clog my e-mail. They sometimes leave me puzzled. Still, I don't know a home baker who isn't occasionally enticed to try something new, especially when giving food as a token of appreciation or love. And cookies make such wonderful gifts because, as least economically, it only takes a dozen or so to please a receiver. It's hard to be enthused about a new recipe, though, when it includes expensive or exotic ingredients that won't get used again, such as the cookies that had lemongrass, fennel or blue cheese in them!

Recipe News: Favorite cookbook recipes: Boneless Buffalo Wings from “Comfort Foods Made Healthy”

One of my favorite cookbooks of 2008 is EatingWell Comfort Foods Made Healthy: The Classic Makeover Cookbook, by Jessie Price and the editors of EatingWell magazine (Countryman Press, $24.95, 255 pages). Among the many appealing recipes is the Tofu Parmesan I posted a few months ago.

For another sampling from Comfort Foods Made Healthy, take a look at the recipes below. Buffalo wings (named for the city where they originated) are classic bar food, usually deep-fried and then tossed in a mixture of hot sauce and melted butter. The original recipe is literally dripping with fat.

Recipe News: Christmas diner starters

OVER the next three Sundays, we'll show you how to make a magnificent Cook School Christmas dinner. The menu for this modern four-course festive feast is as follows: rillette of smoked, poached and hot-smoked salmon; white bean, bacon and chorizo soup; roast partridge with caramelised apples, chestnuts and cider; Helston pudding and Cook School custard. The only thing you really need to order is a couple of partridges from your butcher – the rest of the ingredients are all widely available. Partridges are also fairly easy to get hold of, but it's better to be safe than sorry at Christmas. We've usedADVERTISEMENT

We begin this week with the two starters. Each would work perfectly well alone, but why not do both? It is Christmas, after all. First off is the rillette of smoked, poached and hot-smoked salmon. Rillette is a bit like pâté, but much lighter. For this, almost everything can be done in advance, with just a quick mix at the last minute.

Recipe News: Simple recipes make sweet success for young bakers

Holiday baking with children can be a sweet experience. Bath resident Beth Kaczmar, who was a finalist in a Mrs. Fields cookie-baking contest in 2007, said she grew up baking and now she shares that tradition with her own children.

“We do lots of cookie decorating, and we always make a gingerbread house every year,” Kaczmar said. “That’s a lot of fun. It usually takes a lot of time and patience.”

Those are two virtues the baker suggested adults have plenty of when it comes to having a little helper. She also said you’ve got to approach the task with a light heart.
