"Today I am posting my road test of a recipe for Mini Coconut Cupcakes with Chocolate Frosting that I adapted from the cookbook Salty Sweets by Christie Matheson, which I read about on the fine blog The Kitchn.

I, like many of those in the big old blogosphere, have strong feelings about cupcakes. And today's cupcakes, I believe, are like some kind of creature from a horror movie - you know the creature which some nice, spectacled scientists have been quietly nurturing in their lab but that then spirals out of control, growing fast and bloated and threatening to take over the world.
