Recipe News: Refreshingly Cool Recipes for Summer
"Summertime entertaining doesn’t need to be fancy or work-intensive; the sun has been intense enough this past week!
Here are two recipes for topping toasted baguette slices. Or guests can dip into these hearty Italian spreads with pita bread or pita chips. The first recipe requires no cooking, and the second just a slow simmer. If you want to reduce the time cooking, you can use double the amount of pre-cooked lentils (I get mine at Trader Joe’s) and simmer the broth, garlic, and tomatoes for just 10 minutes or so before adding the cooked lentils. This kept me from having to heat up my kitchen beyond the 90 degrees it is as I write this!
