Recipe News: Baking for people with allergies
This is a favorite time of the year with seasonal foods and music and traditions that make special memories. The smell of fresh baking cookies and the excitement of decorating and tasting your special creations are some of my most treasured memories. But baking those holiday cookies can be challenging when family members have food allergies, says Rosemarie O'Carroll, co-owner of Rose's Wheat Free Bakery, 2901 Central St., Evanston, (847) 859-2723.
It is especially so, when multiple allergies are involved. Baking and cooking becomes in some ways even more special and I think more important to teach children who do have special needs how to make the things that they love, she said. It is worth the extra effort.
Her bakery uses a standard gluten free mix which has been around for a while. This flour mixture can be substituted for all purpose wheat flour in most recipes one for one.
