Recipe News: Flip over potato-crusted salmon
Wayne Sullivan of Riverside, Conn., an 11-year visitor to the island, emailed about a favorite dish. “Seven years ago we had the rehearsal dinner for our wedding at the National, and the potato-crusted salmon was the big hit. To this day I still have family asking me to try and get the recipe for this dish for them. If you could help, my family and I would be very grateful!”
It’s a testament to the appeal of this dish that it has actually been featured in Recipe Request before, as one of the first dishes ever asked for five years ago. In June 2002, Neva Flaherty of High Street wrote to say she missed ordering it at the Harborside Restaurant, where it had been a popular dinner entr/e until the hotel was sold. The previous owners kept the recipe, however, and moved it down the street to their other hotel, the National.
It’s still served there, although now, says National manager Julie Fuller, the dish is no longer on the regular menu or available at special functions. It is, however, offered as a special most nights.
