Recipe News: Lighten Up: Lighten Up: Chef Emily's Chocolate Cookies

Traditional cookies and confections are always welcome at holiday time as a nibble for your guests, as a hostess gifts for parties or for those famous Wisconsin cookie swaps.

Unfortunately, cookies and holiday treats come loaded with needless calories and a host of unhealthy nutrient-devoid ingredients. Let's be honest. Everyone needs a good bite of sweet something from time to time.

As a chef, what never ceases to amaze me is the amount of sugar in recipes. We don't need all of that sugar. I took a traditional chocolate cookie recipe, exchanged the white sugar for brown sugar and then cut the amount of sugar called for in the recipe from 3½ cups down to just 2/3 cup. The result is a delicious, dark chocolate morsel."
