Recipe News: Roasted garlic recipes fit for a queen

"Combined with butter, oil and spices and foods to create sauces for dipping and cooking, cooked garlic has been a staple of the Mediterranean diet for thousands of years. And roasting vegetables has been a popular method of preparing vegetables in Italy, Greece and the Provence region of France.

Roasting vegetables became popular here in the 1980's, with garlic being the most widely used. After roasting, garlic takes on a sweeter, milder flavor.
Use roasted garlic in soups, salad dressings and pasta sauce. Spread it on hot French bread or combine it with olive oil and some parmesan cheese for dipping bread into."
