"Leeks are not used much in American cooking, though the French rely on them.

Directions for many French recipes tell you to wash leeks "very carefully" as they contain lots of grit that hides between their multiple layers.

Leeks from American produce sections don't require all that care. Sure, you still want to slice them vertically and rinse them to remove any grit. But grit is rare.
