Recipe News: A Vermont meal in January

"All the ingredients except for salt, pepper, mustard, and cinnamon in the meal below were grown in Vermont and were bought last week in Burlington, Middlebury, or Montpelier. In addition to co-op markets, natural foods stores and independent grocers, Vermont Russet potatoes and dried beans from North Hero can be found at Sam Mazza’s Farmstand in Colchester and fresh-caught lake fish at Ray’s Seafood Market in Essex Junction. New discoveries at old haunts included fresh cultivated exotic mushrooms from Colchester, stone-ground flint corn from Westfield, and frozen Vermont strawberries. (Flint corn-crusted pan-fried trout with mushrooms anyone?)"
