Recipe News: Let your oven do the grilling

"Summer grillers feel no hesitation throwing garden vegetables over the fire. Corn, tomatoes, eggplant and peppers all take beautifully to grilling's dry heat - they shrink as their moisture evaporates, concentrating flavors and browning their natural sugars.

You can duplicate the process indoors in your oven with produce more typical of winter. Sure, you won't get the smoky flavor of the grill (unless you are one of those hardy cooks who fleece-up to stand over a grill in single-digit temperatures).

But the same high temperatures and dry heat can intensify the flavor of turnips and rutabagas, potatoes and onions, apples and pears and other vegetables associated with this season."
